Seat covers show up on eBay fairly regularly. Check with Saddleman.

EMGO is another good source for mirrors. I'm almost positive that you want a mirror with an 8mm threaded post to fit the FT500 mounting locations.

Side covers are from parts bikes, bike recyclers & eBay. Your other option is to fabricate custom side covers.

If you are interested I (very carefully) lifted an original seat cover off my bike. Its only done 8000 miles so is in perfect condition - no rips or tears - looks like new. Would only need to be stapled back on to the original seat base
I also have unmolested side panels off the same bike.
Only thing is I'm in the UK so I would need to check postage costs if you wanted them and live in the US.
